THE OPPORTUNITY
We are seeking an experienced Executive Chef to lead the culinary operation at The Country Club Hotel. This will be a high-volume, fast-paced venue requiring a strong leader who knows how to deliver quality food consistently at scale. This is a genuine opportunity to help build the kitchen operation from the ground up — from recruitment and systems through to menus, standards, culture and commercial performance.
ABOUT THE ROLE
As Executive Chef, you will take ownership of the overall culinary operation and play a key role throughout the pre-opening, launch and ongoing operation of the venue. Key responsibilities include:
- Leading, mentoring and developing a large kitchen brigade
- Recruiting and onboarding the opening culinary team
- Establishing kitchen systems, procedures and operating standards
- Overseeing menu development, implementation and food quality
- Delivering consistent, high-quality food through high-volume service
- Managing food costs, stock control, wastage and supplier relationships
- Managing labour, rosters and kitchen productivity
- Maintaining strong food safety and compliance standards
- Working closely with venue management to achieve commercial targets
- Building a positive, accountable and high-performing kitchen culture
ABOUT YOU
We’re looking for an experienced culinary leader who is comfortable operating at scale and understands the balance between food quality, team leadership and commercial performance. Ideally, you will have:
- Experience as an Executive Chef, Head Chef or senior culinary leader
- Experience in pubs, clubs, hotels, resorts or large-volume restaurants
- Strong leadership and people-management skills
- Proven food cost, labour and wastage management
- Strong menu development and food-costing knowledge
- The ability to maintain quality and consistency under pressure
- A hands-on leadership style with strong operational discipline
- Previous venue-opening experience will be highly regarded
WHY JOIN US?
This is more than stepping into an established kitchen — you’ll have the opportunity to help create the entire culinary operation. You’ll shape the team, systems, menus and culture from the beginning, backed by an established hospitality group and a major new venue designed for significant volume. You’ll also benefit from:
- A generous salary package and bonus structure available for the right candidate
- A major new venue opening
- Significant involvement in the pre-opening phase
- Career opportunities within the wider Comiskey Group
- The opportunity to build and lead your own culinary team
- A dynamic venue combining food, sport, entertainment and events
READY TO LEAD THE CULINARY TEAM?
If you’re an experienced hospitality leader who thrives on volume, enjoys developing people and wants to put your own stamp on a brand-new venue, we’d love to hear from you.
