Spezia is the Italian restaurant at The Sandstones Club, inside the beautifully restored heritage Lands building in the heart of Sydney’s Sandstone Precinct. Inspired by the lively spirit of Italy’s town squares, we serve generous, seasonal Italian food in a stunning setting.
We’re growing our kitchen team and looking for passionate chefs who can start quickly.
What you’ll bring
- At least 2 years experience in a quality, high volume restaurant (Commis: 1 year or a recent qualification)
- Italian cooking, fresh pasta or grill experience is a big plus
- Strong work ethic, attention to detail and pride in every plate
- Calm under pressure and a genuine team player
- Availability across mornings, evenings and weekends
- Full Australian working rights
- Able to start immediately

Key Responsibilities
- Prepare and cook dishes to Spezia’s standards across your section
- Run your station smoothly during busy lunch and dinner services
- Prep daily mise en place, including fresh pasta, sauces and grill items
- Keep consistency, quality and presentation on every plate
- Follow food safety, hygiene and allergen procedures at all times
- Manage stock rotation, labelling and ordering for your section
- Keep the kitchen clean, organised and ready for service
- Support and train junior chefs, and work closely with the head chef and front of house team
Skills & Experience
- At least 2 years experience as a chef in a quality, high volume restaurant (Commis: 1 year or a recent qualification)
- Italian cooking, fresh pasta or grill experience highly regarded
- Certificate III or IV in Commercial Cookery, or equivalent experience
- Calm, organised and able to work at pace under pressure
- Strong communication skills and a genuine team player
- Available mornings, evenings and weekends
