Manage daily production operations to achieve production targets, schedules & customer requirements.
Oversee daily cheese production and participate in hands-on cheesemaking.
Ensure consistent product quality, food safety, hygiene & compliance with FSANZ, NSW Food Authority, and HACCP requirements.
Supervise & lead production staff, including team leaders & shift supervisors.
Monitor production yields, wastage, labour costs & equipment downtime to improve efficiency & reduce costs.
Coordinate equipment maintenance, troubleshooting & operational improvements.
Ensure production procedures, records & product traceability requirements are maintained.
Investigate production issues & implement corrective actions to prevent recurrence.
Monitor staff performance, training, workplace safety & adherence to company procedures.
Support audits, inspections, and continuous improvement initiatives.
