Roasting Warehouse Specialty Coffee - Marshalltown VIC
Looking for an Executive Chef with the core focus of menu development to oversee our 3 Melbourne based team
Executive Chef - Menu Development | Roasting Warehouse Group
Roasting Warehouse is a family-owned specialty coffee roastery with a growing hospitality group across Melbourne.
Alongside our roastery, we operate cafés in Airport West, North Melbourne and Docklands, plus FILIA - our all-day bistro café and wine bar in Strathmore.
We're looking for an experienced Executive Chef to lead food across the group.
This is not a pass-and-service role.
Your core focus will be menu development: creating, testing and rolling out food that's consistent, profitable and genuinely good, then supporting our venue head chefs to deliver it every day.
The role
- Lead menu development across all venues - seasonal changes, new dishes, specials and menu refreshes
- Build and maintain recipe cards, plating guides, specs and costings for every dish
- Work to food cost and GP targets - menu engineering, supplier pricing and portion control
- Oversee kitchen operations across the group and work closely with each venue's head chef
- Train and develop kitchen teams on new menus, standards and techniques
- Drive consistency in quality, presentation and execution across all sites
- Manage supplier relationships, ordering systems and product sourcing
- Ensure food safety, HACCP and compliance standards are met at every venue
- Collaborate with management and marketing on launches, events and new concepts
About you
- Proven experience as an Executive Chef, Head Chef or Development Chef, ideally across multiple venues
- A strong portfolio of menu creation in bistro or all-day dining
- Commercially minded - confident with costings, GP and menu engineering
- A leader who can coach and support head chefs without needing to run every service
- Organised, self-driven and comfortable moving between sites
- Current food safety supervisor certificate (or willingness to obtain)
- Full driver's licence and own vehicle preferred
What we offer
- Flexible working hours - this is a development-led role, not a service-led one
- Creative ownership of the food direction across a growing group
- A family-owned business with the backing of an established specialty coffee brand
- Competitive salary, commensurate with experience
- Staff discounts across our venues and coffee
- Room to grow with the group as we expand
If you're a chef who loves building menus as much as cooking them, we'd love to hear from you.
