Join our growing butchery program at Wunderlich Lane. Work alongside our Group Butcher, preparing quality produce for our Sydney restaurants.
At The Apollo Restaurant Group, we’re passionate about good food, great hospitality and the people behind it. Our restaurants include The Apollo and Cho Cho San in Potts Point, Greca & Yoko Dining in Brisbane, Olympus Dining at Wunderlich Lane, and our two newest additions joining the precinct Baptiste and Tenjo. As our group continues to grow, so does our commitment to the craft behind our kitchens.
We’re expanding our in‑house butchery program, with our operations based at Wunderlich Lane in Surry Hills, supporting our restaurants across the Sydney precinct. We’re looking for an experienced Full‑Time Butcher to join our team, working directly with our Group Butcher.
The opportunity
This isn’t a traditional retail butchery role. You’ll be based at Wunderlich Lane, working behind the scenes to support our restaurant kitchens with quality meat preparation and production. Reporting directly to our Group Butcher, you’ll be part of a growing program focused on bringing more of our butchery in‑house, improving consistency and making the most of the produce we work with. As the program expands, there’ll be opportunities to contribute ideas, develop your skills and help shape how we operate across the group.
What you’ll be doing
- Breaking down, trimming, portioning and preparing meat for our restaurants
- Working closely with our Group Butcher to maintain quality and consistency
- Supporting the daily preparation and production requirements of our Sydney kitchens
- Maintaining high standards of food safety, hygiene and product handling
- Minimising waste and making the most of every cut
- Contributing to the ongoing development of our in‑house butchery program
Who we’re looking for
We’re after someone who genuinely enjoys their craft, understands the importance of quality and can work confidently and independently. You’ll bring:
- Previous butchery experience, ideally in a restaurant, commercial kitchen or production environment
- Strong knife skills and a solid understanding of different cuts and preparation techniques
- Good organisation, attention to detail and the ability to work efficiently
- Pride in your work and respect for the product
- A collaborative approach and willingness to be part of a growing team
What you’ll get
- A full‑time position based at Wunderlich Lane, Surry Hills
- The opportunity to work directly with our Group Butcher
- Exposure to multiple restaurants, chefs and different styles of cooking
- The chance to be involved in expanding our in‑house butchery program
- Career development opportunities within The Apollo Restaurant Group
- A team that values craftsmanship, good food and doing things properly
Come and be part of it. At The Apollo Restaurant Group, we believe good food starts long before it reaches the plate. The care, knowledge and skill that go into preparing our ingredients matter just as much as what happens during service. If you’re an experienced butcher looking for something a little different from the traditional retail environment, and you’d like to be part of a growing program where your skills genuinely matter, we’d love to hear from you.
