We’re looking for an experienced qualified Baker / Bakery Production Manager to lead the production operation of a busy and well-established bakery on Rottnest Island.

This is a hands‑on leadership role for someone who knows their way around a bakery, enjoys leading a team and takes pride in producing quality product at pace.

You’ll take ownership of the day‑to‑day production operation, while still being close to the product and the team. From production planning and quality through to stock, wastage and food safety, you’ll play a key role in keeping the bakery running smoothly.

And yes… you’ll get to live and work on Rottnest Island!

What you’ll be doing

• Lead and develop the bakery production team.
• Plan and coordinate daily production and workflow.
• Ensure products are consistently produced to a high standard.
• Be hands‑on in the bakery and lead from the front.
• Manage production around customer demand and seasonal trade.
• Manage stock, ordering and wastage.
• Monitor production efficiency, labour and productivity.
• Train, coach and develop team members.
• Maintain high standards across food safety, hygiene and workplace safety.
• Identify opportunities to improve production, quality and efficiency.
• Work closely with the broader bakery team to ensure production meets retail demand.

What we’re looking for

We’re keen to hear from qualified Bakers who are ready to step into a leadership role, as well as experienced Bakery Managers, Senior Bakers or Production Managers.

You’ll ideally have

• A recognised Baking trade qualification or strong equivalent bakery experience.
• Experience working in a busy, high‑volume bakery.
• Strong knowledge of bakery production processes and workflow.
• Experience leading, training or developing a bakery team.
• A hands‑on approach and genuine pride in product quality.
• Strong organisation and time management skills.
• An understanding of stock, wastage and production planning.
• Strong food safety and hygiene knowledge.
• A positive, practical approach and the confidence to make decisions.
• The ability to work well under pressure and keep production moving.

Most importantly, you’ll be someone who loves baking, enjoys leading people and takes pride in doing things well.
