We are seeking a talented and passionate Brewery Chef to join the culinary team at Dad & Dave's Brewing in Brookvale, NSW. This is a full-time position that sits at the heart of our hospitality operations, combining traditional culinary expertise with the unique demands of a brewery environment. As Brewery Chef, you will be responsible for creating exceptional food experiences that complement our craft beer offerings and enhance our guests' overall experience. This role is integral to our mission of delivering outstanding hospitality and building a vibrant community around our brand.
Key responsibilities
- Plan, design and execute menus that pair harmoniously with our craft beer selection
- Prepare and cook high-quality dishes using fresh, locally-sourced ingredients where possible
- Maintain exceptional standards of food hygiene, safety and presentation across all kitchen operations
- Lead and mentor kitchen staff, fostering a collaborative and positive team environment
- Manage food inventory, stock control and supplier relationships to optimise cost-effectiveness
- Monitor food costs and contribute to the profitability of the food operation
- Develop and test new menu items that reflect current culinary trends and guest preferences
- Ensure compliance with all food safety regulations and licensing requirements
- Liaise with front-of-house staff to understand guest feedback and continuously improve offerings
- Maintain kitchen equipment and ensure all areas remain clean, organised and efficient
What we're looking for
- Recognised culinary qualification or equivalent relevant experience in a professional kitchen environment
- Minimum 3-5 years' experience as a chef or senior cook in a high-volume food service setting
- Demonstrated expertise in menu planning and food preparation across a variety of cuisines
- Strong knowledge of food safety standards, hygiene protocols and health regulations
- Proven leadership and team management experience with the ability to motivate and develop staff
- Excellent organisational skills with the ability to manage multiple tasks and deadlines in a fast-paced environment
- Creative flair and willingness to experiment with food and beverage pairings, particularly with craft beer
- Strong communication skills and ability to work collaboratively with all departments
- Physical fitness and stamina to work in a busy kitchen environment
- Preferred: Experience in a brewery, pub or hospitality venue setting, or knowledge of craft beer and food pairing principles
