You'll take ownership of the whole venue, including the restaurant, rooftop bar, functions and events. You'll lead service from the front on our busiest shifts, including Friday and Saturday nights, and finish the night with your team, often as late as 2am. Our weekends are our biggest trading days, so you'll need to be available for them and genuinely enjoy working them.
Key responsibilities
Leading, training and developing the team on the floor, shift by shift
Running food and beverage service across the restaurant, rooftop and functions
Driving service standards and keeping them high when the venue is at its busiest
Rostering and managing labour, beverage and operational costs against budget
Growing and delivering private functions and events
Working with the Directors on marketing, entertainment and local awareness
Maintaining compliance across Food Safety, RSA and WHS
About you
Minimum 4 years' venue management experience
Strong, hands-on food and beverage service skills
Sound knowledge of wine, classic cocktails and beverages
Availability for late nights and weekends, with finishes up to 2am
A proven ability to lead a team from the floor during busy service
A warm, confident presence with guests and staff
The drive to run the venue without an owner on-site
A solid understanding of labour, food and beverage cost control
Confidence with POS, booking platforms and hospitality systems
A good understanding of Instagram, Facebook and TikTok
