Bella Venezia's wine program has a strong focus on Italian, French, Australian and New Zealand wines. Fish House Steak & Grill offers a strong Australian, New Zealand and French focus, complemented by a carefully curated sake selection.

The Role

This is a genuine ownership role with responsibility for:

• Driving premium and high-end wine sales
• Delivering polished and approachable wine service
• Ordering and managing wine stock across both restaurants
• Providing significant input into wine-list development
• Conducting supplier tastings and maintaining excellent supplier relationships
• Attending wine tastings, events and industry functions
• Providing regular wine education for our service teams
• Maintaining cellar organisation, stock rotation and inventory control
• Driving the commercial performance and continued development of both programs

About You

To be considered, you will have:

• WSET Level 3 or an equivalent recognised wine qualification
• Significant sommelier experience within fine-dining environments
• Demonstrated experience working in Chef Hat or Michelin-starred restaurants
• Strong to advanced knowledge of French and Italian wines
• Strong knowledge of Australian and New Zealand wines
• Strong selling techniques and a proven track record in premium and high-end wine sales
• Excellent food and wine pairing skills
• Strong commercial awareness across purchasing, margins and stock management
• Experience developing wine lists and maintaining supplier relationships
• The confidence to educate and inspire front-of-house teams
• Exceptional guest engagement and presentation skills

Sake knowledge will be highly regarded, although a willingness to develop this area is equally important.
