We are currently seeking a skilled and passionate full-time Pastrycook to join our team.
About the Role
As a Pastrycook, you will contribute to the daily preparation and production of high-quality gluten-free pastries, cakes, breads, biscuits and other baked goods in a professional bakery environment. The role requires strong pastry and baking skills, attention to detail, consistency in product quality, and the ability to follow recipes and production procedures carefully in a specialist gluten-free workplace.
Key Responsibilities
- Prepare and bake gluten-free pastries, cakes, breads, biscuits and other baked goods in accordance with established recipes, production methods and presentation standards.
- Measure, weigh and mix ingredients accurately and prepare doughs, batters, fillings, creams, icings and other pastry components.
- Monitor baking times, temperatures, product appearance, texture and consistency to ensure quality standards are maintained.
- Decorate, finish and present cakes, pastries and other baked products to the required standard.
- Follow daily production schedules to ensure products are prepared fresh and available in sufficient quantities throughout operating hours.
- Handle and store gluten-free ingredients carefully and follow workplace procedures designed to minimise cross-contact with gluten‑containing products.
- Monitor ingredient stock levels, rotate stock correctly, maintain appropriate storage and assist in minimising product wastage.
- Maintain a clean, organised and hygienic pastry preparation area and comply with food safety, workplace health and hygiene requirements.
- Work collaboratively with other bakery and kitchen staff to ensure smooth daily production and timely completion of orders.
Skills and Experience
- AQF Certificate III in Patisserie, Certificate IV in Patisserie, or an equivalent relevant qualification.
- At least 1 year of relevant experience as a Pastrycook or in a similar commercial bakery, pastry or kitchen environment.
- Sound knowledge of pastry preparation, baking techniques, dough and batter handling, cake production and dessert preparation.
- Experience with gluten‑free baking or knowledge of gluten‑free ingredients and production methods will be highly regarded.
- Ability to follow recipes accurately and maintain consistency in quality, portioning, texture and presentation.
- Good understanding of food safety, hygiene, allergen awareness and workplace health and safety procedures.
- Strong time management and organisational skills, with the ability to work efficiently during busy production periods.
- Good attention to detail and ability to work both independently and collaboratively within a team environment.
- Flexibility to work across weekdays, weekends, early mornings and public holidays as required.
